Executive pand Chef â Casual Dining Alshaya Kuwait Ref: GP435-748 Alshaya The Role The Role With more than 17,000 employees and 1,700 stores, Alshaya is spearheading the expansion of more than 50 world-class leading retail pands such as Debenhams, Express, Mothercare, Starbucks, Mac, The Body Shop, H&M, Dean & Deluca and Boots in 17 countries across the Middle East, North Africa, Central and Eastern Europe and Russia.To date, the Casual Dining Division of Alshaya includes renowned pands such as Dean & Deluca, Le Pain Quotidien, Sarai, Asha's, The Gaucho Grill, Pizza Express, Totally Fish, Al Forno, Thai Chi, Noodle Factory, Meias, Nolita Pizza, Dondurma, IZ Juice, Santoor, Shangai Express in its portfolio and is still growing.Reporting to the Corporate Chef and Operations - Casual Dining, and based in the passerie de l'Etoile - in Kuwait, the ideal candidate will have a true passion for food, people and customer satisfaction. The Executive pand chef will be fluent with French cuisine and would have worked internationally in fine dining as well as in a more quality French commercial concept. The Executive pand Chef would have a clear understanding of managing food cost, training and developing a multi nationality team of chefs, as well as some advanced notions of the bakery and pastry sections. * To guarantee the food quality standards* To develop successful and creative menus and food promotions* Adapt the French cuisine to the local market keeping the pand identity.* To protect and develop the food cost / margins* To train and develop the kitchen team and establish the succession plan.* Protect the knowhow and ensure all the recipes are clearly set with the required information and passed to the corporate chef * To maintain excellent hygiene standards in all the kitchen areas* To recruit the kitchen team* To ensure compliance with company policy and procedures* Able to work on other concepts outside the passerie de L'Etoile if required. Requirements Requirements * 3 - 5 years as a Head Chef* Proven quality established restaurant * Food cost management experience* Ability to adapt to a new market and develop the existing food offer* Train and develop local staffs and established a succession plan with the kitchen* Driven* A Hands On team player* A true operator* High attention to detail* Foodie* Innovator* Excellent Communicator, great PR* Motivator and self motivated person* CoachEducation:* Chef diploma, Food Management / Hospitality degree is desirable.
